As we approach the fall and winter seasons, many of us will indulge in all
of the goodies associated with the holidays and if you enjoy sweet treats
but not the extra calories and weight gain, then you may want to make
the following dessert.
The dessert:
Apple pie.

Yes, a lot of people enjoy pumpkin and sweet potato pie this time of year,
but apple pie still reigns in a lot of households and if you’re serious about
cutting calories then you must try this recipe.

The pie recipe is from television chef and nutritionist-Joy Bauer and
she calls it “5-Minute Apple Pie!”
Why 5-minute apple pie?
Because it’s made in the microwave and it has a fraction of the sugar,
carbs and fat.

The recipe:
1 apple
1/4 tsp. of ground cinnamon
1 Tbs. of firmly packed brown sugar
2 tsp. of cornstarch or arrowroot powder
2 Tbs. of water
4 cinnamon graham cracker squares, (2 full sheets), crumbled

To make:
Place the diced apple in a microwave-safe bowl. Add the cinnamon
and brown sugar, stirring until the apple pieces are evenly coated.
In a small bowl or ramekin, dissolve the cornstarch in water to make
a slurry. Stir until smooth with no lumps, then pour into the apple
mixture, stirring to combine. This slurry will help thicken the apple
mixture.
Microwave the apple mixture for 1 minute. Carefully remove and stir,
then microwave for another minute, until thick and gooey.
Stir in the crumbled crackers. Divide between 2 ramekins or small bowls,
and if you like, add a Tbs. of whipped cream or Ice cream and a sprinkle
of apple pie or pumpkin pie spice on top.

And one last tip:
If you plan on having more than 2 people at your gathering, you
may want to increase the apples, graham crackers, brown
sugar and water and place it in a baking pan and cook it in
the oven.
