The States Rxs For Good Meals!
Are you a foodie? How about a traveler?
Well, if you’re not able to travel to certain states but want to
taste the regional favorites, you’re in luck, listed below are 4 recipes
that certain states are famous for.
The states: Maryland, Tennessee, South Carolina and Michigan.
Recipe no. 1-
South Carolina Pulled Pork!
Ingredients:
2 Tbs. of olive oil
1 onion, diced
2 cloves of garlic, minced
1 cup of yellow mustard
1/4 cup of apple cider vinegar
2 Tbs. of honey
1 cup of chicken stock
1 small or medium sized bone-in pork shoulder
To make:
Heat oven to 375*F. In your Dutch oven over medium heat, heat the
oil. Add onion and garlic; cook 2 mins. Whisk in the next 3 ingredients.
Season with salt and pepper; let simmer 2 min. Remove from heat.
Add pork to the pot, brush with sauce, then cover tightly with a lid or foil.
Roast 3 hrs. Reduce oven to 325*F. and cook for 1 hr. more or until
the meat is fall-apart tender. Shred pork; toss in sauce. Serve on buns with
some shredded red cabbage and sliced pickles.
Another tip: If you don’t want to use the oven, place the pork shoulder in the
crock pot or slow cooker, with onions and garlic, and cook on high
for 5 mins. or on high for 1 hour and then on low for 6 hours.
And mix up the mustard, apple cider vinegar, honey and chicken stock
in a bowl, and add it later to the shredded pork.
Recipe No. 2-
Maryland “Fried” Crab Cakes!
When one thinks of Maryland and their favorite dishes, seafood
usually comes to mind.
Ingredients:
3/4 cup canned white beans, drained and rinsed
2 eggs
1 Tbs. of Old Bay seasoning
1 Tbs.of fresh parsley
1 Tbs.of Dijon mustard
1 1/2 lbs. of fresh lump crabmeat
1 lemon, juiced and zested
1 1/4 cups of almond flour, divided
To make:
In a food processor, puree the first 5 ingredients; transfer to a bowl.
Stir in crab meat, 2 Tbs. of lemon juice, 1 tsp. of lemon zest and 1/2 cup
of almond flour. Season to taste; shape into six 3″ patties.
Heat oven to 400*F. Dredge crab cakes in remaining flour; place on a greased
baking sheet. Coat with cooking spray. Bake 10 mins, flip and coat with
cooking spray again. Cook 10 mins. more.
Recipe No. 3-
Memphis-Style Barbecue Ribs!
Some say Texas has the “best” barbecue and some say it’s Kansas City, Missouri,
and then there are those who swear that Elvis’ hometown of Memphis has the
“best” barbecue. Make this recipe and form your own opinion.
Ingredients:
2 Tbs. of smoked paprika
1/2 tsp. of cayenne powder
1 tsp. of garlic powder
1 cup of unsweetened apple butter
1 can of tomato paste
3 Tbs. of apple cider vinegar
2 Tbs. of maple syrup
2 racks of pork spare ribs, about 5 lbs.
To make:
In a bowl, mix first 7 ingredients; season. Brush ribs with this mixture,
then wrap each rack tightly in a double layer of foil and chill in the
refrigerator for at least 1 hour or overnight.
Heat grill to medium. Place ribs, still in the foil on the grill over direct heat.
With the lid down, grill ribs 1 1/2 hrs. turning once. Remove ribs from foil
and place directly on the grill. Grill for 10 mins. turning once.
Recipe No. 4-
Michigan Bean & Potato Pasty!
Cherries are the “main” food when one thinks of Michigan, but if you
want tasty comfort food on a cold Michigan night, then make these.
Ingredients:
1 Tbs. of olive oil
1/4 cup of finely diced onions
2 carrots, finely diced
1 medium-sized potato, finely diced
1 can of kidney beans, drained and rinsed
1 tsp. of fresh tarragon, minced
2 Tbs. of chopped fresh parsley
2 (9″) round store-bought piecrust dough
1 egg, whisked
To make:
In a pan over medium heat, heat oil. Cook onions 2 mins.
Add carrots and potatoes; cook 15 mins. stirring often. Add 1/2 cup of
water to pan to deglaze. Remove from heat, add the beans and herbs.
Season to taste.
Heat oven to 375*F. With 5″ round cutter, punch out dough circles. Divide filling
among circles, brush edges with whisked egg, then fold dough over and press to seal.
Brush tops of pasties with the egg. Bake on a parchment-lined baking sheet for 20 mins.
