The Leftover Easter Egg Rxs!
If you plan on boiling eggs for this Easter holiday, what do you plan
on doing with them after the holiday is over?
If it’s just deviled eggs or leaving them in a bowl for a quick snack,
you may want to try one of the recipes listed below.
The Recipes:
a) Curried Egg Salad-
Spread these eggs on some avocado toast.
To make:
In a bowl, combine 6 hard-boiled eggs (chopped up),
1/4 cup of mayo, 1 tsp. of curry powder, 1 sliced green onion
and 1/4 tsp. of salt. Divide among 4 avocado toasts;
garnish with some crunchy chickpeas.
b) Nicoise Salad Cups-
Garlic dressing makes this dish a standout.
To make:
Whisk 1/4 cup of mayo, 2 Tbs. of lemon juice and 1/2 tsp. of garlic
salt. To each of the 4 cups, add 1/2 cup of chopped Iceberg lettuce,
1/4 cup of halved cherry tomatoes, 3 Tbs. of flaked tuna, 1 Tbs. of
dressing, 3 (1/4″) slices of hard boiled egg and 1/2 tsp. of chopped
chives; repeat layering once more. Makes 4 servings.
c) Jalapeno Deviled Eggs-
Not your “run of the mill” deviled eggs, the addition of jalapeno sauce
makes these extra special, recipe from Martha Stewart.
To make:
Peel 6 hard boiled eggs; cut in half. Separate yolks from whites. In a food
processor, pulse yolks with 1/4 cup of mayo, 1 tsp. of green Tabasco,
juice of 1 lime, 2 Tbs. of chopped chives and 1/4 tsp. of salt until smooth.
Pipe filling into egg whites.
Don’t have a pipe filler? No problem, just fill a small baggie with the egg
filling and cut a tip in one of the corners and squeeze into egg whites.
That’s it, 3 tasty recipes for any leftover boiled eggs you may have after
the Easter holiday.
