Fat-Melting Soup Rx For Vegans!
Diet Advice For Teen Vegans!
If you have a teen or are a teen who plans on going “vegan” for the new year, (2022),
remember to proceed with caution and follow a few rules.
Eating this way can prevent and reverse serious conditions like heart disease, diabetes,
some cancers, hypertension and arthritis.
Eating a high carb, oil-free, plant-based diet can bring happiness and effortless weight loss.
And if you’re wondering why no oil, here’s why.
If slimming down is your goal, a tilt of the olive oil or coconut oil bottle can easily add
500 calories to any meal.
(Use vegetables broth, water, fruit juice, bananas or applesauce in place of oil, eggs and
butter).
So, if you’re ready to embark on this new journey and need a recipe or two to get you started,
here are two, one for a tasty potato chowder, (especially helpful during the cold months)
and a taco recipe for teens who love fast food, (but only healthier).
Recipe No. 1-
Creamy Potato-Vegetable Chowder!
Ingredients:
1 medium-sized onion
2 stalks of celery, finely chopped
2 medium-sized carrots, finely chopped
2 tsp. of dried thyme
1 Bay leaf
2 large potatoes, cleaned well and cubed (do not peel)
3 1/2 cups of vegetable broth
1 bag of frozen veggies, (green beans, cauliflower and broccoli)
3 Tbs. of flour or arrowroot powder
2 1/2 cups of milk, almond or soy or unflavored rice
sea salt and black pepper
To make:
Add onion, celery, carrots and 1 -2 Tbs of water to a large pot over medium-heat;
stirring occasionally (making sure the veggies don’t burn) Add more water if necessary.
Add the thyme and bay leaf and cook for another minute. Add potatoes and broth and
turn down the heat to low, cover the pot and heat until potatoes are slightly tender.
Add the frozen vegetables and turn the heat up to medium, about ten minutes.
Meanwhile, whisk the flour and milk until well blended and slowly add to the pot, simmer
until soup becomes thick, toss in a little salt, pepper and turmeric and cook for another
3 mins. Remove the bay leaf and serve with a crusty whole grain (optional)
Enough for 4 servings.
Recipe No. 2-
Taco Tuesday or Any Night of The Week!
Ingredients:
8 corn tortillas
1 can of vegetarian refried beans, heated up
1 cup of shredded lettuce
1 tomato, diced
1 green onion, sliced
Avocado, sliced or cubed
salsa to taste
Soy cheese or nutritional yeast
To make:
In a skillet heat the tortillas, until warm and soft,
Spread about a large spoonful of beans down the center of the tortilla,
add the rest of the toppings, fold in half and enjoy.
There you have it, 2 recipes to help kick off your journey toward veganism.
