Well, instead of the usual chicken salad or chicken salad sandwich,
use up that chicken to make the following…

Recipe no. 1-
A Creamy Chicken Twist!
To make:
This is a twist on the popular Waldorf salad which gets pops of sweetness
and crunch from grapes and walnuts.
To make:
Mix 1 cup of diced chicken, 1/4 cup of plain Greek yogurt, 1 Tbs. olive oil,
2 Tbs. red wine vinegar, 1/4 cup halved grapes (red or green) and 2 Tbs.
of walnuts. Enjoy this on a bed of lettuce or place it atop a slice of
gluten-free whole wheat bread.

Recipe no. 2-
Tex-Mex Chicken Soup!
Assemble this soup in heatproof jars, add some hot water and have it
for lunch or dinner.
To make:
In a heatproof jar (Use a Mason jar), combine 3/4 cup of salsa, 1/2 tsp. of
chili powder, 1/2 cup of black beans,* 1/2 cup of corn and 1/2 cup of shredded
chicken. And right before you’re ready to eat this soup, pour in 1/3 cup of hot water,
stir well and pour into a big bowl.
* Use black beans from a can, not fresh beans.
Enjoy with a piece of gluten-free bread or as a stand alone dish.

Recipe no. 3-
A Smoky Chipotle Chicken Wrap!
If you enjoy BLTs, then you’ll enjoy this.
To make:
Get a large burrito or wrap and layer it with 1 cup of romaine lettuce, 2
slices of bacon, (turkey or regular) 2 slices of roasted red peppers, half
of an avocado, (diced) 3/4 cup of shredded chicken, and drizzle on
2 Tbs. of chipotle ranch dressing. Fold it or roll it up and enjoy.

Another tip:
If you don’t have any leftover chicken on hand, run to your local supermarket
and purchase a rotisserie chicken.
