If you have your own garden or buy lots of produce this year, you may
want to can some veggies, freeze some fruit and veggies and then give some
to family and friends.

Well, if you’re overburdened with fruits and veggies, there’s another option.
What is it?
You can make pickled veggies, healthy veggies chips and fruit preserves. |

So, if this sounds appealing to you, here are the 3 recipes.
a) Fruit & Veggie Chips-
Take a break from the heavily oiled and fattening potatoes
and use up that green squash, beets and apples to make your
own healthier chips.
To make:
Heat oven to 200*F. Thinly slice the produce of choice into 1/4″-thick rounds.
Spread in a layer on 1 or 2 greased baking sheets. Sprinkle on a little oil
(Coconut or olive); season with salt or other spices and herbs and bake for
3 hours.
Store the chips in an air-tight container for up to a week.

b) Fruit Preserves-
You love a peanut butter and jelly sandwich and bagels with fruit preserves,
but what you don’t love-the extra sugar and high calories.
Use some berries, peaches, apricots and plums.
To make:
In a medium-sized saucepan, bring 2 lbs. of fruit, 3 Tbs. of lemon juice and
1 Tbs. of dark honey to a boil. When it starts to boil, lower the temperature
and simmer for 1 hour. Let the pan cool; cover and store in plastic containers
or clean jars. Use the preserves in about 2 weeks.
Another tip:
If you love peach preserves on baked chicken or fish, by all means go for it.

c) Pickled Vegetables-
If you have plenty of asparagus, green beans, and cabbage, pickle them
and make your own version of probiotic, healthy vegetables.
To make:
Cook 1 lb. of vegetables in a pot of salted water until just tender.
Rinse the vegetables under the cold water. In jars, mix 2 cloves of
garlic, 1 Tbs. of peppercorns, 2 bay leaves, 2 cups of vinegar and
1/3 cup of sugar; add the veggies and chill for 24 hours before eating.
You can store these veggies for up to a month.
